INGREDIENTS

  • 1  Searay Yellow Croaker, approximately 1 lb
  • 2  cloves of garlic, crushed and peeled
  • 1 tbsp shredded ginger
  • 1 stk green onion, cut into thin slices

SEASONING

  • 2 tbsp Maggie soy sauce
  • 1 tsp pepper

INSTRUCTIONS SERVES 2

  1. Thaw fish, gut and descale
  2. Rinse and then blot dry
  3. Coat well with 1 tsp of salt
  4. Heat 2 tbsp of cooking oil and pan fry garlic until fragrant
  5. Add fish and pan fry until golden on both sides
  6. Add a splash of cooking wine, a quarter cup of water, ginger and seasoning ingredients
  7. Fry for a few minutes
  8. Garnish with green onion

  • 1 條  海威野生黄花魚, 約1磅
  • 2 瓣  蒜頭, 拍扁, 去衣
  • 1 湯匙  羌絲
  • 1 棵  葱, 切幼絲
調味
  • 2 湯匙  美極醬油
  • 1 茶匙  

美極煎黃花魚

  1. 將魚解冰去鱗, 去腸臟, 洗凈, 吸乾水份
  2. 用1茶匙鹽塗勻魚身
  3. 熱鑊落油2湯匙爆香蒜頭, 煎魚至金黄色, 反轉亦煎至金黄色
  4. 灒酒, 加入1/4杯水, 調味品, 羌絲, 煎片刻
  5. 放上葱, 上碟供食
  6. 吃起來鮮甜美味, 好像在香港時所吃到的黄花魚, 並無分別
