Eel Stew with Roast Pork

Ingredients

  • 1 pkg Searay conger eel chunk
  • ½lb roast pork
  • 1 bundle Chinese celery, sectioned
  • 1 clove garlic
  • 1 stk green onion, sectioned
  • red chilli, sectioned
Seasoning
  • 1½ tsp salt
  • ½ tsp sugar
  • ½ tsp pepper
Sauce
  • 1 ½ tsp corn starch
  • 1 tsp oyster sauce
  • ½ tsp sesame oil
  • ½ cup water

Recipe
  • Thaw eel and debone and cut into bite size pieces
  • Marinate with seasoning
  • Add 2 tbsp oil into a heated wok to sauté garlic & ginger
  • Stir fry eel and add a splash wine then continue to stir fry
  • Add 1/2 cup water, stew for 10 minutes
  • Stir in roasted pork, celery & chilli; continue to stew for 5 minutes
  • Add sauce and bring to boil, add green ouion.
  • Plate up and serve.

  • 1札    唐芹菜, 切段
  • 1粒   蒜頭 ,拍扁
  • 1棵  蔥,切段
  • 10克   羌,切段
  • 1隻   紅辣椒 ,切段

調味

  • 1½茶匙  鹽
  • ½茶匙  糖
  • ½茶匙  胡椒粉
芡汁
  • 1茶匙    蠔油
  • ½茶匙  麻油
  • 1½茶匙   粟粉
  • ½量杯   水
黄門鱔炆燒腩
  1. 將鱔觧冰, 去大骨起肉切塊
  2. 加入調味品, 醃片刻
  3. 熱鑊落油2湯匙, 爆香蒜頭, 羌, 炒鱔塊, 灒酒, 炒勻,
  4. 加入1/2杯水, 炆約10分鐘
  5. 加入燒腩, 唐芹菜, 紅辣椒, 續炆5分鐘, 埋茨, 煮滾,
  6. 加入葱叚, 兜勻
  7. 上碟供食。
