Crumbed Squid Ring with lime and coriander dipping sauce

Ingredients

  • 300g  Searay cleaned squid ring
  • 2 eggs, lightly whisked
  • 2 tsp Dijon mustard
  • 50g (1/3 cup) plain flour
  • 210g (3 cups) fresh breadcrumbs
  • Salt
  • freshly ground black pepper
  • Vegetable oil, to deep-fry
  • Mixed salad leaves, to serve
  • Lime wedges, to serve

Dipping sauce

  • 80 ml (1/3 cup) fresh lime juice
  • 80 ml (1/3 cup) peanut oil
  • 2 tbsp chopped fresh coriander leaves
  • 1 tsp finely grated lime rind
  • Pinch of caster sugar
  • Salt
  • freshly ground black pepper

Recipe
  • Combine the lime juice, peanut oil, coriander, lime rind and sugar in the bowl until well combined
  • Add salt and pepper and set aside
  • Combine eggs and mustard in a bowl
  • Place flour and breadcrumbs on separate plates
  • Add salt and pepper. Coat squid rings in flour and shake off excess
  • Dip into egg mixture, one at a time, allowing excess to run off. Coat well in breadcrumbs
  • Add vegetable oil and heat over medium-high heat
  • Cook one-third of the rings for 1-2 minutes or until golden brown
  • Put cooked rings into a plate lined with paper towel
  • Serve with dipping sauce, salad leaves and lime wedges

  • 300克  海威魷魚圈
  • 2 隻蛋
  • 2 茶匙 芥末
  • 50克 (1/3 杯) 普通麵粉
  • 210克 (3 杯) 新鮮的麵包屑
  • 原粒黑椒粒
  • 茶油, 炸魷魚圈用
  • 沙律菜, 伴碟用
  • 青檸切件

蘸醬汁

  • 80 克 (1/3 杯) 新鮮青檸汁
  • 80 克 (1/3 杯) 花生油
  • 2 湯匙 切碎的新鮮香菜葉
  • 1 茶匙 碎的青檸皮
  • 捏碎的蔗糖
  • 原粒黑椒粒
香炸魷魚圈
  1. 把青檸汁、花生油、芫荽、青檸皮及糖伴勻, 再加適量鹽及黑椒,待用
  2. 把雞蛋及芥末混合放在碗裡,將麵粉及麵包屑分別放到不同的碟上
  3. 麵粉裡加入鹽及黑椒,魷魚圈沾上麵粉,將多餘的粉甩掉
  4. 把已上粉的魷魚圈浸入蛋醬裡,最後沾上麵包屑
  5. 加入植物油,用中高熱量,把大約三分一的魷魚圈放入熱油炸大約1-2分鐘或至金黃色
  6. 待熟後放到已舖上隔油紙的碟上
  7. 伴以蘸醬、沙律菜及青檸食用
